The same old morning eggs can get a little boring. We all know they’re a breakfast staple, but there is so much more you can do to incorporate them into amazing dishes throughout the day.
For this week’s Meatless Monday, YouTuber QKatie has a great recipe for poaching eggs. She does it in a rich tomato sauce and serves it over some crunchy, hearty bread. Trust me, you are going to want to try this.
You will need 4-6 eggs (depending on the size of your skillet) and a 28 ounce can of crushed tomatoes. You can dress up the tomato sauce with 2 garlic cloves, red pepper flakes and some olive oil.
